Château de Castex, with its vineyards located in one of the best areas of the Grand Bas Armagnac, is owned by the Baron de Saint-Pastou family since 1789.
A month after the harvest the white wine is distilled in an Armagnacchese alembic, fed with a wood fire, where the alcohol vapors condense, return to boil and reach the coil so that the final condensationtake place.
With this system it takes 21 hl of wine to obtain a pièce of 400 liters at 52°C. The mild and humid climate, the adequate exposure to wind and sun, the clayey soil, the dark oak (noir) of the Domaine's forests, used in the first phase of aging, also define the high quality of the product.
In this first period of 3-4 years the bas armagnac acquires its characteristic noir coloring and dampens its alcoholic strength. Subsequently it is transferred to "dead" wood barrels, which has lost its tannins.
This procedure is very different from the two normal modern systems, based on the use of cuvée in cement and glass exposed to sunlight and containing wood chips for 10% of the total volume, or aging in barrels containing a cylinder filled with shavings.
The seriousness of the Baron de Saint-Pastou and respect for the original methods of distillation and aging allow us to try today, as the ancient Gascons did centuries ago, unique sensations in the tasting of this precious distillate.
