Bérêche & Fils owns 7 hectars in the area of Montagne de Reims. Since 2004, when Raphael started working with his father, the production method is changed a lot: in the vineyard, systemic treatments and herbicides have been banned and lines are controlled in a very meticolous way.
The winery is changed too: spontaneous fermentation and durmast cask with different provenience and capacity (those cask are used both for wine production and aging). the 'tirage' is carried out with corck cap in order to mature the Cuvée in a situation of monitored oxidation.
The aim is to go back to ancestral techniques of wine production but in a more sensitive and aware way.
